How to Make Tomato Confit? (Easy Technique)

This tomato confit technique is an easy way to preserve fresh summery tomatoes. Slow roasted tomatoes that are packed with flavour and will enhance any kind of meal! Enjoy it on fresh bread, pasta or pizza!
Ingredients
680g (1.5 pound) of tricolor grape tomatoes (or red)
1 cup of virgin olive oil
6-7 cloves of garlic, skin removed and smashed
6-7 sprigs of fresh thyme
Flaky sea salt
Pinch of red pepper flakes
Instructions
- Preheat the oven to 275F. Add grape tomatoes and garlic cloves to a large baking dish. Drizzle with olive oil. Add salt and red pepper flakes. Mix together. Add fresh thyme on top of the tomatoes.
- Bake for 1:30 to 2h.
- Store in a mason jar in the fridge, remove thym sprigs.
Notes
- Conservation:
In the fridge: in a mason jar for up to 1 week.
In the freezer: make sure you use an airtight container and freeze for up to 3 months.
