Lemon Chicken Skewers with Garlic Yogurt Sauce

minutesThe skewers that save my summer dinners. I prep the marinade ahead of time, grill them on the BBQ, serve in a pita with lots of crunchy veggies… and everyone’s happy (even the tiny humans at the table).
Ingredients
- Chicken Skewers
4 Exceldor chicken breasts, cut into 1-inch cubes
5–6 garlic cloves, minced
¼ cup olive oil
Juice and zest of ½ lemon
1 tbsp Dijon mustard
1 tbsp honey
1 tsp salt
1 ½ tsp ground cumin
½ tsp ground turmeric
- Garlic Yogurt Sauce
1 cup plain Greek yogurt
Juice of ½ lemon
1-2 garlic clove, minced
Salt and pepper, to taste
- For serving
6-8 Greek-style pita breads
Sliced red onions or pickled onions
Sliced tomatoes
Ribboned mini cucumbers
Lettuce
Instructions
- In a large bowl, mix the 1-inch chicken cubes with 5–6 minced garlic cloves, ¼ cup olive oil, the juice and zest of ½ lemon, 1 tbsp Dijon mustard, 1 tbsp honey, 1 tsp salt, 1 ½ tsp ground cumin, and ½ tsp ground turmeric. Toss well to coat the chicken evenly. Ideally, marinate in the fridge for 30 minutes, or up to 12 hours if prepping ahead.
- Thread the marinated chicken onto approximately 8 skewers (wooden or metal). If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
- Preheat the BBQ to medium-high heat. Grill the skewers for 10 to 12 minutes, turning them every 1-2 times to ensure even cooking.
- Prepare the garlic yogurt sauce: in a bowl, combine 1 cup Greek yogurt, the juice and zest of ½ lemon, and 1 minced garlic clove. Season with salt and pepper to taste, and adjust as needed.
- To assemble, serve the grilled chicken in warm pita bread with garlic yogurt sauce, sliced tomatoes, cucumber ribbons, red onions, and lettuce.
