THE tomato salad to make all summer long. Simple, flavourful, and a little different… the perfect side for anything grilled or a laid-back dinner on the patio.
With tangy sumac shallots, fresh mint, and gorgeous heirloom tomatoes, this salad is a total showstopper.
Ingredients
1 large shallot or 2 small ones, thinly sliced
4 tbsp white balsamic vinegar
1 tbsp white sugar
½ tbsp sumac
3 heirloom tomatoes, Cut into wedges (ideally in 3 different colors)
4 tbsp olive oil, plus more for drizzling
200g goat feta, cut into thin triangles
~30 whole mint leaves
3 tbsp pistachios, roughly chopped
Instructions
- Make the marinated shallots: In a small bowl, combine the thinly sliced shallot(s) with 2 tbsp white balsamic vinegar, 1 tbsp sugar, and ½ tbsp sumac. Set aside.
- In a large bowl, toss the tomatoes with 4 tbsp olive oil and 2 tbsp white balsamic vinegar. Season generously with salt.
- Transfer the tomatoes to a serving plate. Nestle the feta slices among the tomatoes. Top with the marinated shallots and pour the remaining shallot liquid over the salad.
- Garnish with the ~30 whole mint leaves and 3 tbsp chopped pistachios. Drizzle with a bit more olive oil and season, freshly ground black pepper and sprinkle sumac to your preference.
